Mullen Mine*. Emergency Rations

*(Millennium omelette)
Ingredients:
Medium/Large Potato: 1
Medium Leek: 1
Eggs: 3
Small Onion: 1/4
Garlic: Half a clove
Cheddar Cheese: some
Butter: 2 Knobs
Olive Oil
Tarragon
Black Pepper & Salt
Instructions:
  1. Roughly dice part boiled potato. Gently sauté, but not fry, in butter and olive oil. Add onion, finely chopped, and crushed Garlic to soften and flavour as potato cooks.
  2. Stir in around 4 inches of medium sized leek, cut in rounds towards the leaves, followed by a sprinkling of dried tarragon. Season with salt and ground black pepper. Sauté a little more then cover to complete cooking.
  3. Lightly beat eggs and then pour into large omelette pan in which a knob of butter has been brought to the sizzle. Cook omelette until browning underneath, but barely set on top.
  4. Ensuring the potato/leek filling is hot, place this on omelette. Grate cheese over, fold omelette immediately to heat egg through.Enjoy on its own or with salad.
